Pancake Love

Since Tuesday was International Pancake Day, Then why not share my favorite little pancake recipe with you.

So I love Pancake day. It’s one of the days on the year where no one can tell you, you can’t eat pancakes (even though you shouldn’t care anyway).

So in honer of Pancake day (2 days ago, but still), here is my pancakes for 2 recipe.

I’m a single girl, so nope, I don’t make a whole giant batch, but this is just the perfect size for me.

First you will need:

  • 1 cup all purpose flour.
  • 1 teaspoon baking powder.
  • 2 tablespoons sugar.
  • 1/4 teaspoon salt.
  • 1 large egg.
  • 3/4 cup milk.
  • 1/2 teaspoon of vanilla extract (or if you want a more powerful vanilla flavor, use vanilla bean paste).
  • 1 tablespoon salted butter, melted.
  • Optional: chocolate chips or blueberries (aprox. 1 cup).

All you have to do is mix all the dry ingredients in one bowl and all the wet ones in another. Pour the wet ingredients into the dry and mix well until completely combined. It should be thick, but if it seems too thick for your liking, just mix a bit more milk into it.

I guess most people know how to make the pancakes over heat, so I won’t waist a lot of time explaining the obvious. Instead, here are some great topping choices: Butter, Syrup, Fruit, Candy, Chocolate, Caramel sauce, Bacon, Or basically anything you want.
